I’m not sure why knives cannot be shown from the top case, but it is certainly wise to keep knife samples out of easy access. Chef cutlery like these would be particularly sharp and well-honed. The case knives might be out-of-bounds because displayed in a particular order or arrangement. Even though I have worked as a butcher, there are far too many knives for me. I could do a great job with as few as 2 or 3.
